Malaysian Satay Chicken with Saffron Rice, Stir-Fried Veggies & Blanched Bok Choy

Description:

A Southeast Asian-inspired dish featuring tender Malaysian Satay Chicken in a rich peanut-based sauce, paired with aromatic saffron rice, stir-fried veggies, and delicate blanched bok choy.

Ingredients:

Chicken, Cold Pressed Extra Virgin Olive Oil, Garlic, Ginger, Peanut Butter, Coconut Milk, Soy Sauce, Brown Sugar, Lemongrass, Kaffir Lime Leaves, Turmeric, Cumin, Coriander, Salt, Pepper, Saffron, Basmati Rice, Carrots, Bell Peppers, Broccoli, Bok Choy, Crushed Peanuts, Fresh Coriander.

Components:

• Malaysian Satay Chicken: 200g (50g protein)
• Saffron Rice: 150g (~5g protein, 45g carbs)
• Stir-Fried Veggies: 75g (~2g protein, 5g carbs)
• Blanched Bok Choy: 75g (~2g protein, 4g carbs)

Plating Instructions:

1. Spoon 150g of saffron rice onto one side of the plate.
2. Arrange 200g of Malaysian Satay Chicken alongside the rice, drizzling some peanut sauce over the top.
3. Add 75g of stir-fried veggies next to the chicken.
4. Place 75g of blanched bok choy neatly beside the veggies.
5. Garnish with crushed peanuts and fresh coriander.
