Description:
A hearty, comforting dish with tender lamb stew, golden roast potatoes, earthy charred eggplant, and lightly blanched broccoli.
Ingredients:
Lamb, Cold Pressed Extra Virgin Olive Oil, Garlic, Onion, Carrots, Celery, Beef Stock, Red Wine, Tomato Paste, Thyme, Bay Leaves, Salt, Pepper, Potatoes, Olive Oil, Eggplant, Broccoli, Fresh Parsley, Lamb Gravy.
Components:
- Lamb Stew: 200g (50g protein)
- Roast Potatoes: 150g (~3g protein, 33g carbs)
- Charred Eggplant: 75g (~1g protein, 5g carbs)
- Blanched Broccoli: 75g (~2g protein, 5g carbs)
Plating Instructions:
- Spoon 200g of lamb stew into the center of the plate or tray.
- Arrange 150g of roast potatoes on one side of the stew.
- Add 75g of charred eggplant in a layer beside the potatoes.
- Place 75g of blanched broccoli neatly alongside the eggplant.
- Garnish with a sprig of parsley and a drizzle of lamb gravy.
