Description:
A classic roast beef dish with creamy sweet potato mash, tender blanched broccolini, and smoky roasted capsicum.
Ingredients:
Beef, Cold Pressed Extra Virgin Olive Oil, Garlic, Rosemary, Sweet Potatoes, Butter, Salt, Pepper, Broccolini, Roasted Capsicum, Beef Jus.
Components:
- Roasted Beef Slices: 200g (50g protein)
- Sweet Potato Mash: 150g (~3g protein, 35g carbs)
- Blanched Broccolini: 75g (~2g protein, 4g carbs)
- Roasted Capsicum: 75g (~1g protein, 3g carbs)
Plating Instructions:
- Spread 150g of sweet potato mash as a base on the plate.
- Place 200g of roasted beef slices over the mash.
- Arrange 75g of blanched broccolini on one side.
- Add 75g of roasted capsicum beside the broccolini.
- Drizzle with jus and garnish with a rosemary sprig.

- Rosemary sprig
- Drizzle of jus
