Description:

A light and flavorful dish with grilled salmon, nutty quinoa salad, tender wilted kale, and sweet roasted pumpkin.

Ingredients:

Salmon, Cold Pressed Extra Virgin Olive Oil, Garlic, Lemon Juice, Quinoa, Cherry Tomatoes, Cucumber, Red Onion, Fresh Herbs (Dill/Parsley), Wilted Kale, Roasted Pumpkin, Salt, Pepper.

Components:

  • Grilled Salmon Fillet: 200g (50g protein)
  • Quinoa Salad: 150g (~5g protein, 45g carbs)
  • Wilted Kale: 75g (~2g protein, 4g carbs)
  • Roasted Pumpkin: 75g (~1g protein, 7g carbs)

Plating Instructions:

  1. Place 150g of quinoa salad on one side of the plate.
  2. Lay 200g of grilled salmon fillet on top of the quinoa.
  3. Arrange 75g of wilted kale on one side.
  4. Add 75g of roasted pumpkin next to the kale.
  5. Garnish with a lemon wedge and fresh dill.

  • Fresh dill
